WHAT IS IT?
Distilled using the same botanicals as their Rare Dry Gin, the resulting spirit is then transferred into a solera of nine French oak chardonnay barrels, each with a subtly different character. Every six months, distiller Cameron Mackenzie tastes each barrel and then blends a portion of each to create this complex, nuanced and entirely too sippable gin. Solera 1 was first released on World Gin Day in June 2014 and Solera No 2 was released in late 2014, and went on to win a Gold Medal at the 2015 San Francisco World Spirits Competition.
When pouring this into a glass there is an immediate aroma in the room of preserved citrus, crushed coriander and an defined ginger character. There's a sweetness from the aging in the barrels and a peppery finish. The texture is soft and the oak props everything up.

WHO'S BEHIND IT?
Founded in the year 2013 by Stuart Gregor, Cameron Mackenzie and Matt Jones, the distillery itself is located in Healesville in Victoria. They established Four Pillars Distillery with a clear purpose in mind; to elevate the craft of distilling in Australia and celebrate the art of cocktail making. The Four Pillars is a reference to the four key elements underpinning their craft; their copper pot stills made by CARL in Germany (and called Wilma, Jude and Eileen), the water used in the distillation, the botanicals used to make the gin and last but not least, love; a commitment to their craft and attention to detail every step of the way.
Their first gin, the Rare Dry Gin was released in December 2013 with the aim of capturing the flavours of both Asia and the Mediterranean. This was followed shortly by their barrel aged gins and limited releases such as the Spiced Negroni gins from the Bartender Series.

Please note we are currently experiencing delays with deliveries across our entire shipping network. This is largely due to reduced domestic flights, social distancing measures being put in place by our shipping partners which increase processing and sorting time, and an increase in the volume of parcels they have to process. The estimates below are therefore not accurate but we are unable to give a more definitive guide as to shipping times. WHERE DO YOU SHIP TO?
We currently deliver within Australia only. If however, you wish to purchase a gift for someone living in Australia, please feel free to do so. All you have to do is nominate their delivery address in the checkout stages but please make sure you enter your billing address as being your overseas address to which your card is registered to. We suggest you include a note with the order to let us know it is a gift otherwise there may be a delay in the processing of your order whilst we verify your details for fraud purposes.
HOW LONG WILL MY DELIVERY TAKE TO ARRIVE?
Orders are normally despatched within 48 hours of cleared payment being made.
Current estimates for standard delivery times are as follows:
NSW - Between 3-5 working days
ACT/QLD/VIC - Between 3-7 working days
SA/WA/TAS - Between 5-10 working days
NT - Between 7-14 working days
The likelihood is that your order will arrive sooner than the above estimates however, this can vary from location to location and time of the year. There may also be certain periods around special occasions such as Christmas, Valentines Day, Mother's Day, Father's Day etc where you may experience some delays in your orders being received due to the volumes of parcels that are being processed and delivered by our shipping partners. If you need your order to arrive by a specific time or urgently (including same day for Sydney metro), please contact us before you place your order so we can work with you to accommodate any requests.
WHO DO YOU SHIP WITH?
We currently use the services of Fastway, Couriers Please and Australia Post. Depending on your delivery location, we will ascertain which of the delivery providers are best placed to ship your order in a timely and cost efficient way.
WHEN ARE DELIVERIES MADE? WHAT IF I'M NOT HOME?
All deliveries are made during business hours on the weekdays. We therefore ask that you nominate an address at which someone over 18 is available to sign for the parcel. We are unable to deliver to PO Boxes or Parcel Lockers at this time. If a parcel has to be re-delivered or delivered to a different address, you will be fully responsible for any re-delivery charges that may be levied by the delivery provider.
CAN I RETURN OR CANCEL AN ORDER?
You can cancel an order if it hasn't been despatched. Please contact us straightaway if that is the case. We do not offer returns unless the wrong item has been shipped to you or it is delivered damaged. Please ensure you take photos of your parcel upon delivery to forward to us so that we can process any refund or send out a replacement item appropriately.
