WHAT IS IT?
Jensen's Old Tom gin is made using a recipe taken from a handwritten distiller's notebook dating from the 1840s, using clean wheat base spirit and heavy on classic gin botanicals with a focus on the roots and spices. The botanicals are added to the still dried and then steeped to release their flavour. It is a classic London Dry gin. This gin is a recreation of the style of gin that was first shipped to America and is therefore most accurate for the production of classic gin cocktails. It is a true Old Tom gin, similar to those used by the bartenders of the mid-to-late 1800s.
Unlike other Old Tom gins on the market today, Jensen's Old Tom gin is not sweetened with sugar. The sweetness on the nose comes from the heavier use of sweeter botanicals such as liquorice. There's also root, musk and spice aromas but it is dry on the palate. The flavour of the gin opens up when mixed and it is works well in cocktails such as the Martinez or Tom Collins.

WHO'S BEHIND IT?
Founder Christian Jensen first became aware of vintage bottling of London gins while working in Japan as a consultant in the world of information technology. The story goes that he was in one of Tokyo's infamous bars when he was given a drink containing an old gin made in London at a now closed distillery. Over the ensuing months Christian would stop by this bar regularly to have the same drink. When it came time to return to London, the bar owner gave Christian his last remaining bottle of that gin, which was possibly also the last in the world. When he was back in London, he set about tracking down further bottles of his beloved gin and his search yielded the recipe for it from a public records office. With the help of Charles Maxwell at Thames Distillers, Christian reproduced the gin he had first tasted in Japan and so Jensen's Bermondsey London Dry Gin was born. In addition to the recipe for the London Dry Gin, Christian had also unearthed various other gin recipes from the same closed distillery, one of which was the recipe for the Old Tom Gin.
Although initially distilled under contract with Thames Distillers, Jensen's London Dry and Old Tom Gin have since 2013 moved production to its very own distillery in Bermondsey. Today, all of Jensen's gins are distilled in Bermondsey Distillery under the expertise of master distiller Dr Anne Brock, who has a DPhil in organic chemistry.
HOW TO DRINK IT - SOME SERVING SUGGESTIONS
Aside from the classic cocktails, Jensen's Old Tom also works well in cocktails with strong flavours such as the Negroni and Last Word where it helps to round out flavours and supplement the dimensions of the cocktail with complimentary complexity by adding an earthy and robust character.

WHERE DO YOU SHIP TO?
We currently deliver within Australia only. If however, you wish to purchase a gift for someone living in Australia, please feel free to do so. All you have to do is nominate their delivery address in the checkout stages but please make sure you enter your billing address as being your overseas address to which your card is registered to. We suggest you include a note with the order to let us know it is a gift otherwise there may be a delay in the processing of your order whilst we verify your details for fraud purposes.
HOW LONG WILL MY DELIVERY TAKE TO ARRIVE?
Orders are normally despatched within 48 hours of cleared payment being made.
Current estimates for standard delivery times are as follows:
NSW - Between 3-5 working days
ACT/QLD/VIC - Between 3-7 working days
SA/WA/TAS - Between 5-10 working days
NT - Between 7-14 working days
The likelihood is that your order will arrive sooner than the above estimates however, this can vary from location to location and time of the year. There may also be certain periods around special occasions such as Christmas, Valentines Day, Mother's Day, Father's Day etc where you may experience some delays in your orders being received due to the volumes of parcels that are being processed and delivered by our shipping partners. If you need your order to arrive by a specific time or urgently (including same day for Sydney metro), please contact us before you place your order so we can work with you to accommodate any requests.
WHO DO YOU SHIP WITH?
We currently use the services of Fastway, Couriers Please and Australia Post. Depending on your delivery location, we will ascertain which of the delivery providers are best placed to ship your order in a timely and cost efficient way.
WHEN ARE DELIVERIES MADE? WHAT IF I'M NOT HOME?
All deliveries are made during business hours on the weekdays. We therefore ask that you nominate an address at which someone over 18 is available to sign for the parcel. We are unable to deliver to PO Boxes or Parcel Lockers at this time. If a parcel has to be re-delivered or delivered to a different address, you will be fully responsible for any re-delivery charges that may be levied by the delivery provider.
CAN I RETURN OR CANCEL AN ORDER?
You can cancel an order if it hasn't been despatched. Please contact us straightaway if that is the case. We do not offer returns unless the wrong item has been shipped to you or it is delivered damaged. Please ensure you take photos of your parcel upon delivery to forward to us so that we can process any refund or send out a replacement item appropriately.
